French Onion Beef Roll (Facebook)
Ingredients 🛒
1 lb beef tenderloin or sirloin
2 tbsp olive oil
3 large onions, thinly sliced
3 tbsp butter
2 cloves garlic, minced
1 tbsp balsamic vinegar
1 sheet puff pastry, thawed
1 egg, beaten
½ cup Gruyère cheese, shredded
2 tsp fresh thyme
Salt and pepper to taste

Preheat the oven to 400°F (200°C).
In a large skillet, heat olive oil over medium-high heat. Sear the beef until browned on all sides, about 2 minutes per side. Set aside to cool slightly.
In the same skillet, melt butter and add the sliced onions. Cook on low heat for 15-20 minutes until caramelized. Add garlic, thyme, and balsamic vinegar, and cook for another 2 minutes. Season with salt and pepper, then set aside to cool.
Roll out the puff pastry on a floured surface. Spread the cooled onions in the center of the pastry, sprinkle Gruyère cheese over the onions, and place the beef on top.
Carefully fold the puff pastry around the beef and onions, sealing the edges. Brush with the beaten egg.
Place the roll seam-side down on a baking sheet. Bake for 25-30 minutes, or until the pastry is golden brown and crispy.
Let the roll rest for 5 minutes before slicing. Serve warm with a sprinkle of fresh thyme on top.
