Remove pits from dates and soak in dark coffee
Blend soaked dates and coffee until smooth to create a date and coffee paste, then set aside
Chop 50g of dark chocolate and set aside
In a bowl, mix 1 cup ground almonds, add 1 egg, tahini, and baking powder, then mix well
Add the chopped chocolate to the mixture and mix
Add the date and coffee paste to the mixture and mix thoroughly
Shape the dough into either 6 large cookies or 12 mini cookies
Sprinkle with sea salt
Bake in a preheated oven at 180°C for 12 minutes
Let cool and enjoy
