  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

  3. Add the peanut butter, egg, and vanilla extract. Beat until smooth and well combined.

  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. The dough should be thick and soft.

  6. Roll about 1½ tablespoons of dough into balls and place them on the prepared baking sheets, spacing them 2 inches apart.

  7. Use a fork to press the dough balls in a crisscross pattern, flattening them slightly.

  8. Bake for 9–11 minutes, or until the edges are lightly golden and the centers look soft.

  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
