Melty Vegan Cheese
  1. Combine all ingredients in a blender.

  2. Taste test and add salt as desired.

  3. Transfer mixture to a saucepan and bring to a simmer over low-medium heat (about 5 mins).

  4. Once simmering, the mixture will thicken. Reduce heat to low and continue to stir for an extra 1-2 minutes then remove from heat.

  5. Cheese can be eaten immediately or saved for later. If saving for later, shape into a ball or pour into a lined baking dish or bowl. Freeze and then grate when you're ready to use it.
