Rainbow Chicken Chop
  1. Finely chop the cabbage, bell peppers, chicken, broccoli, cucumber, cilantro, and mint. If using whole carrots, grate or finely chop them.

  2. Add all chopped ingredients to a large mixing bowl and season with a big pinch of kosher salt.

  3. In a jar, combine sesame oil, rice wine vinegar, honey, chili crisp, ginger, garlic, and kosher salt. Seal and shake until well combined.

  4. Pour ¾ of the dressing over the salad and toss to coat. Taste and adjust seasoning with additional salt if needed.

  5. Right before serving, add the crunched up cashews and ramen noodles to the salad.
