Unmould the jelly just before serving, as it tends to release water after being taken out of the mold. It can be stored in the refrigerator for 2-3 days and is best enjoyed cold.
If this is your first time making the jelly and you're unsure if it will set, you can perform a quick test. Scoop a small amount of the liquid into a saucer and place it in the fridge to set for about 5 minutes.
Check the texture of the jelly. If you are satisfied with it, proceed to pour the remaining liquid into the mold.
If the jelly does not set, you can fix it by adding more agar-agar powder. First, dilute the powder in some room temperature water, then mix it into the existing jelly liquid and heat it again.
Repeat the test with a small portion to ensure the texture is to your liking before pouring it into the mold.
Conversely, if the jelly is too stiff or hard, add more water to the mixture and reheat it. Test the texture again before pouring it into the mold.
If you have already poured the mixture into the mold and it hasn't set, don't discard it! Simply place the liquid back into a pot, add more agar-agar powder, mix well, and reheat.
After reheating, repeat the texture test before pouring it back into the mold.
