Self-saucing Sticky Date Pudding
  1. Place the dates, bicarbonate of soda and boiling water in a bowl, pour over 3 cup boiling water and let to combine. Stand 5 minutes.

  2. Meanwhile, beat the butter and sugar in a bowl. Add the beaten eggs. Make a well in the centre.

  5. To make the sauce, stir in a combine the maple syrup and cinnamon to a jug. Add remaining ingredients.

  7. Close lid, select MANUAL, program as PRESSURE COOKING, set time to 6 minutes. Start.

  8. When cooking is complete, turn pressure regulator to VENT to allow the pressure to release. Serve warm.

  9. Serve warm from the pot and enjoy with custard, cream or ice cream. Save any extra sauce into the pudding on standing. Cover and serve with a little extra. Tip: If desired, save any remaining pudding and use within 2 days.
