Preheat oven 350*
Sauté Onion in butter.
Sauté Ground Chicken
Stir all ingredients together
Shape into 3 - 4 individual meatloafs
Place in baking dish sprayed with Oil
Bake for 35-40 minutes
Remove and sprinkle with additional mozzarella cheese
Return for a few minutes to melt cheese
SAUCE:
Butter & Flour for roux
Stir in Chicken broth & milk
Salt & Pepper
Grated Parmesan Cheese
Stir in a couple of Tablespoons of Crm. of Mushroom Soup
Place meatloafs on individual plates
Pour Mushroom/Cheese Sauce over or along side
