  1. Heat a large fry pan with a medium heat and add in ½ cup extra virgin olive oil

  2. Meanwhile, cut 3 medium sized potatoes (peeled & washed) into small pieces that are ½ inch (1.25 cm) thick

  3. Add the cut potatoes into the pan with the olive oil, mix together so all the potatoes are coated in the olive oil, mix every 3 to 4 minutes

  4. After 22 to 24 minutes and the potatoes are golden fried, drain into a sieve with a bowl underneath, reserve the olive oil

  5. Using the same pan with the same heat, add in 2 tbsp of the reserved olive oil from the potatoes, after 1 minute add in 5 cloves of garlic thinly sliced, mix with the olive oil, after 1 minute add in ½ tsp sweet smoked paprika and ½ tsp hot smoked paprika, mix together, then add in ½ cup white wine and simmer for 3 minutes, then add in the fried potatoes and season with sea salt & black pepper, mix together until well mixed

  6. Transfer the potatoes into a serving dish and sprinkle with finely chopped parsley, enjoy!
