Dice your cabbage, cilantro, and jalapeno into small pieces
In a small pan coated with spray oil on medium low heat, grill your shrimp
In a small bowl, add the cilantro, jalapenos, cabbage, garlic, soy sauce, sesame oil, and rice vinegar and mix well to make your slaw
Chop your cooked shrimp and add it into a bowl with soy sauce, light mayo, kewpie mayo, sriracha, furikake, and minced garlic and mix well to make your poke
In a small pan, pour your oil to be ½ an inch high and turn to high heat until the oil reaches 370°F
Grab your rice paper, snap it into 4 equal sized pieces, and toss each piece into the oil and quickly remove once it turns crispy
Get your crispy rice paper cracker and top it off with some of your cabbage slaw, shrimp poke mix, and furikake and enjoy!
