Spicy Peanut Coconut Noodles
  1. In a pan add neutral oil.

  2. Once the oil is heated add ginger, garlic and onions and saute for about a minute.

  3. Add the coriander powder and cook it.

  4. Add ½cup water along with soy sauce and stock cubes.

  5. Let the water simmer

  6. Once the water is hot add in the peanut butter and chili oil.

  7. Adjust the seasonings

  8. Add the coconut milk and let it simmer on a low flame.

  9. Stir in the lemon juice and sesame oil once off the flame.

  10. Add the noodles to the boiling water and let it cook for 4-5 mins or till they are completely cooked.

  11. Strain the noodles once done and rinse under cold water

  12. In a bowl place the noodles and pour over the prepared broth

  13. Garnish with chopped peanuts, green onions,sesame seeds and chili oil
