Crack your eggs into a bowl and lightly beat then add the flour and whisk to a thick paste
Add ½ of the milk and whisk through before adding the ½ half and doing the same
Season with the salt and pepper transfer to a jug and rest in a fridge for 2 hours. Mix before using
Preheat the oven to 200c/400f and heat your chosen tray I use a muffin tin for the shape for 10 mins with 1 tsp of your chosen fat in each slot
Carefully pour the mix into the middle of the fat and fill the gaps half way up. If you pour more in they're go massive and misshapen which is no bad thing but they won't look like mine
Bake at 200c/400f in a fan oven for 25 mins don't open the door until they're done
