Combine shredded chicken, cream cheese, buffalo sauce, ranch, cheddar, bacon, and seasonings in a bowl. Mix until thick and creamy.
Preheat oven to 375°F (190°C) or air fryer to 350°F (175°C). Line tray with parchment paper.
Flatten biscuits into 4-inch circles. Add 1 tbsp filling and 1 mozzarella cube to the center.
Seal dough around filling, pinching seams and rolling into balls. Place seam-side down.
Brush with melted butter and sprinkle parsley and Parmesan.
Bake for 15–18 mins (oven) or air fry for 8–10 mins until golden and bubbly.
Cool for 5 minutes before serving filling will be hot and melty.
