Mix Greek yogurt, self-rising flour, and olive oil in a bowl until it turns into a dough
Leave the dough on the countertop for 30 minutes
Divide the dough into 4 or 6 portions and shape into balls
Let the dough balls rest for 20 minutes
Roll out each ball thin
Cook on a hot pan until both sides are golden
Cover with a clean towel to keep warm and soft
Optional: glaze with melted salted butter and parsley or chimichurri
