Cook 250g uncooked rice according to package directions
Heat oil in a pan and cook 700g beef mince until browned
Add ½ diced onion and 3 cloves minced garlic, cook until fragrant
Add 150g sliced mushrooms and 1 diced fresh chilli, cook until softened
Stir in 4 Tbsp oyster sauce, 3 Tbsp sweet chilli, 2 Tbsp mirin, and 2 Tbsp soy sauce
Simmer until sauce thickens and coats the beef
Smash 1 small cucumber with the side of a knife and cut into pieces
Mix cucumber with 1 Tsp chilli flakes, 1 Tbsp light soy sauce, 1 Tbsp mirin, and 1 Tbsp sesame oil
Top with 1 sliced spring onion and 2 Tbsp sesame seeds
Serve sticky beef over rice with smashed cucumber salad on the side
Garnish with 2 sliced spring onions
