Mix together all of the ingredients for the base layer
Press into a loaf pan and bake at 170°C for 12-15 minutes, or until top is a light golden brown
Meanwhile, melt together ingredients for caramel layer in a small pot and simmer for 2-3 minutes
Stir through peanuts
Pour caramel over base layer and let it set in the fridge or freezer until hard
Once set, melt chocolate and coconut oil together until smooth
Pour over caramel layer and sprinkle with sea salt
Return to fridge until set
