Arugula & Pinenut Salad
  1. Toast pine nuts in a bit of EVOO on the stove (be vigilant to not burn!) Set aside to cool.

  2. Halve cherry tomatoes

  3. Shave plenty of Parmigiano set aside

  4. Emulsify oil & vinegar

  5. Combine arugula & tomatoes, and toss in dressing

  6. Add pine nuts & Parmigiano right before serving
