Preheat oven to 375°F (190°C); line a baking sheet with parchment paper.
In a bowl, combine ground chicken, onion, garlic, breadcrumbs, egg, parsley, Parmesan, feta, olive oil, salt, pepper, and oregano. Mix gently by hand.
Divide mixture into 6–8 portions; shape into mini loaves and place on baking sheet.
Bake 25–30 minutes until golden brown and internal temperature reaches 165°F (74°C).
Optional: sprinkle additional Parmesan and feta in the last 5 minutes of baking.
Let rest 5 minutes, garnish with parsley, and serve.
