Combine sourdough discard with cottage cheese, blending until smooth.
In a separate bowl, mix the flour, baking powder, baking soda, and salt.
Work the cold, cubed butter into the dry ingredients until you get a crumbly mixture.
Stir in honey and then add the sourdough-cottage cheese mixture, followed by just enough milk to bring the dough together.
Lightly flour a surface, gently press the dough to about an inch thick, and cut into biscuits.
Arrange on a baking sheet and bake at 425°F (220°C) for around 15 minutes or until golden.
