Boil noodles al dente according to package directions
Heat avocado oil over medium high heat and sear beef in batches, on both sides, remove from pan
Melt butter in pan and sauté onion and garlic, mushrooms, and thyme
Add half the beef broth to pan to deglaze, scraping the brown bits off the bottom, then add remaining beef broth along with heavy cream, sour cream, Worcestershire, and Dijon mustard
Simmer until reduced, then combine with cooked beef and noodles
Top with grated parmesan and fresh parsley
