Combine chili flakes, soy sauce, black vinegar, sugar and sesame seeds to taste in a small bowl. Set aside
Heat pan over medium-high, add oil until slightly smoking. Add garlic, ginger and onions. Cook until mostly soft and add pork. Cook pork until slightly pink (or as done as you want) then add sauce. Cook for 1-2 minutes then add noodles.
And serve!
