In a large skillet, heat 2 tsp oil, once hot add the chopped meat. Season with Montreal steak seasoning and cook until meat is fully cooked. Remove from skillet and cover to keep warm.
Then add the veg to the skillet and drizzle with some oil. Sauté until the vegetables are tender.
Add the beef back to the skillet with minced garlic, stir and cook until meat is reheated. Remove to a plate.
Hear the skillet to medium high heat. Add some oil to the pan and place the tortilla in the skillet. Add have the provolone cheese slices followed by the meat filling. Then add the remaining cheese slices and top with the second tortilla.
Cook until the cheese is melted and the outside is golden and crisp, flipping once. Slice and serve.
