Toppings
Mix the ingredients for the sauce together.
Heat oil over medium high heat. If using chicken, cook it first, then add the shrimp after 5 minutes. Add green onions (white parts only) once the proteins are cooked.
Move all cooked items to one side and cook eggs until finished on the other side. Mix together once complete.
Add in cooked noodles, bean sprouts, and tofu. Cook until sauce has reduced.
Add in green onions (green parts) and peanuts and mix to combine.
Plate and top with additional bean sprouts, peanuts, chili flakes, and lime juice.
