Remix of Mushroom + Miso Bourguignon With Butter Bean Mash
  1. Sauté the mushrooms in olive oil until browned.

  2. Add the shallots, carrots, and garlic, and sauté for a few minutes.

  3. Pour in the red wine, vegetable stock, tomato purée, miso paste, thyme, and bay leaves.

  4. Simmer for 30-40 minutes until the vegetables are tender.

  5. Stir in the maple syrup (if using) and fresh parsley.

  6. For the butter bean mash, blend the beans, lemon juice, and nutritional yeast until smooth.

  7. Serve the mushroom bourguignon with the butter bean mash and sliced baguette.
