Ostie Piene Recipe
  1. In a small saucepan, heat the heavy cream over low heat until it starts to simmer. Remove from heat immediately.

  2. Add the finely chopped dark chocolate, unsalted butter, vanilla extract, and a pinch of salt to the hot cream. Stir until the chocolate and butter have completely melted and the mixture is smooth and glossy. This is your chocolate ganache.

  3. Allow the ganache to cool for a few minutes, then gently fold in the roasted hazelnuts. This will create a rich, nutty chocolate filling.

  4. Take a wafer and spread a generous spoonful of the chocolate hazelnut filling over it, leaving a small border around the edges.

  5. Place another wafer on top, pressing down gently to spread the filling evenly. Repeat this process for the remaining wafers.

  6. Place the filled wafers on a tray lined with parchment paper and refrigerate for about 30 minutes to allow them to set.

  7. Once the wafers have set, you can optionally dust them with powdered sugar for an elegant finish.
