Preheat the oven to 350°F.
Chop the white chocolate bars and crush the Lemon Oreos. Set aside.
In a large bowl, combine the melted butter, brown sugar, granulated sugar, lemon extract, and vanilla bean paste. Mix together for no more than 3 minutes.
Add the eggs and mix until combined.
Add the flour, baking powder, baking soda, and salt to the same bowl. Fold the wet and dry ingredients together until a cookie dough forms.
Fold in the white chocolate and crushed Lemon Oreos.
Line a baking sheet with parchment paper.
Scoop the cookie dough into balls and place them on the prepared baking sheet.
Bake at 350°F for 11–12 minutes.
Remove from the oven and allow the cookies to set for 5–7 minutes before serving.
