Cook onion, garlic, and spices in olive oil until spices bloom and onion is soft. Add rice vinegar.
Cut and coat meat in same spices as onions to sit while onion cooks.
Add Lamb and cook until brown and almost cooked through
Add Lentils and toast slightly
Add Chicken stock, potatoes, bay leaves, and coconut milk
Add more spices to taste once simmered for a bit
While simmering, cook sweet potatoes in microwave (or oven) until tender.
To a blender, add sweet potatoes, cashews, salt, and water. Blend well.
Once Yukon potatoes are tender and lentils are cooked, add sweet potato mixture to pot. Let simmer for a few minutes to combine.
Serve over rice with naan
