Sheet Pan Cheesy Steak Fajita Burritos
  1. Preheat oven to 425°F

  2. Slice flank steak thinly against the grain into strips and add to a bowl with baking soda and water, let sit for 10-15 minutes

  3. Add marinade ingredients (tomato paste, soy sauce, adobo sauce, taco seasoning, oil, and cumin) to the meat and mix

  4. Add diced peppers and onions to a sheet pan and roast at 425°F for 20-30 minutes until softened or charred

  5. Place a wire rack on top of the roasted veggies and layer sliced steak until fully covered

  6. Place under high broil for approximately 8 minutes until meat is browned with charring

  7. Remove from oven and mix meat and veggies together, then add cheese, pico de gallo, and Greek yogurt and mix to combine

  8. Top with additional cheese and cilantro, portion into 12 servings, add to burrito tortillas, roll, and store frozen

  9. To reheat, microwave for 2 minutes then cook in a pan for a few minutes to brown each side
