Add poppy seeds and warm milk to a small pot, let sit for 10 minutes.
For the cherry compote: Mix cherries, honey, and simmer for 5 minutes. Add cornflour, stir, and let cool.
Mix twarog, egg, sugar, flour, and poppy seeds (if using). Season with a pinch of salt.
Flour a surface, split dough into two. Roll each into a thin sausage and cut into 2.5cm pieces.
Bring water to a boil. Gently add vareniks, making sure they don't stick. Once they float, cook for 1 more minute, then remove.
Serve with sour cream and cherry compote (or jam/fruit of choice).
