Take the ham out of the fridge about 30 mins before cooking.
Pop it in a pot, cover with cold water, bring to the boil. Cook for 30–35 mins until the thickest part hits 75°C on a meat thermometer.
Let it rest for 10 mins while you preheat the air fryer to 200°C.
Mix the honey, soft brown sugar, and wholegrain mustard for the glaze.
Score the top of the ham lightly, then brush on half the glaze.
Put the ham in the foil-lined air fryer basket and cook for 10–12 mins.
Brush with the rest of the glaze and cook for another 6–8 mins, until sticky, golden and caramelised.
Rest 5–10 mins before slicing
