Confit Garlic Tahini Dressing
  1. Heat the oven to 150°C. Peel the garlic cloves and add to a small ovenproof dish, add enough olive oil to cover the cloves. Cover with a lid or piece of foil and slide into the oven for 40 mins, or until golden.

  2. Scoop the garlic from the dish and add to the base of a bowl. Mash with a fork. Add the Greek yoghurt, tahini, and juice of the lemon. Season with salt and pepper.
