Walnut Pesto Fall Pasta Salad
  1. Preheat oven to 200ºC degrees. Line baking sheet with parchment paper. Cube butternut squash and place on baking sheet. Add mushrooms to same baking sheet. Drizzle olive oil over top, add salt & pepper and fresh rosemary. Bake for 20 minutes. If mushrooms are crispy, remove from baking sheet and add to a bowl and cover. Add butternut squash back to the oven for 25 mins until roasted.

  2. When mushrooms are removed from oven, bring a large pot of salted water to boil. Once water is boiled, add pasta and cook according to box instructions. Once butternut squash is cooked, remove from oven and set aside in a bowl and cover.
