Start by pre-heating your oven to 180c. Also grease and line three 8 inch cake tins, leave these aside.
In a large bowl, add the cocoa powder, coffee and hot water. Whisk these together, then leave this aside to cool down for 5-10 minutes.
After it has cooled down, add the softened butter, oil and both sugars. Beat these together for 5 minutes.
Add 3 of the eggs into this and mix. Then add the remaining eggs and buttermilk, mix these in too.
Now add the flour and mix just until you get a smooth batter.
In a small separate bowl, add the baking soda and then pour the vinegar over it. This will start bubbling, just give it a quick mix, then pour it into your cake batter and whisk this in.
Pour this batter into your cake tins and bake for around 35-40 minutes, or until a toothpick inserted into the centre of the cakes comes out clean. Once baked, leave your cake layers to cool completely.
Whiles your cakes are baking, make the caramel.
In a pot or pan, add the sugar and place this over medium heat.
Keep heating this, whiles constantly stirring, until all the sugar has melted and turned a deep amber colour.
Take this off the heat and add the butter, whisk this in. Then whiles still whisking, pour in the hot cream.
Now mix in the vanilla and salt.
Place this onto low heat and let the caramel simmer for about 2 minutes, just so it can thicken slightly
Pour this through a sieve to get out any lumps, then leave aside to cool down completely.
At this point, make the buttercream. Then leave this aside until ready to use.
Once everything has been made and the cake layers and caramel have cooled completely, we can start putting the cake together.
I started by cutting the top of my cake layers off, just so I have more flat even layers, but this part is optional.
Place one of your cake layers down onto a plate or cake board, spread some of the buttercream on top of this, then pipe a border of the buttercream around the edge of the cake. Add a thin layer of the cooled caramel in the middle of this.
Add a second layer of cake, more buttercream and caramel, then the final layer of cake.
Leave this in your fridge to set up for 20 minutes, then you can decorate it.
I just covered the cake in the buttercream, then spread some caramel on top. But you can decorate it however you want.
Now the cake is done, cut into it and enjoy!
