Bake the potatoes.
Cut the top ⅓ of the potato off.
Scoop out the potato flesh into a bowl. Leave some flesh in the potatoes to keep the structure strong. Try not to rip the skin.
Fry the potato boats in oil until golden brown.
Add cream, butter and cheese to the potato flesh and mix thoroughly.
Add the mash potato mix to a gallon bag and set aside.
In another pan add the olive oil, ground beef and seasoning, fry up until completely cooked through.
Add the frozen veggies and cook for another 3-4 minutes.
Mix in the flour with the meat and veggies, cook for another 2-3 minutes.
Pour in the beef broth and mix until it thickens.
Spoon the beef mix into the potato boats.
Cut a hole in the corner of the baggie with the mashed potatoes.
Squeeze the mashed potatoes over the beef mixture of the boats.
Place the potatoes into the oven heated to 350F for 10-15 minutes until the tops are golden brown.
Remove from the oven, serve and enjoy!
