Mix the Vegetables: Take a large bowl and toss together the grated zucchinis, chopped onion, grated carrot, diced red pepper, and parsley. Season with salt and black pepper, mixing thoroughly.
Prepare the Batter: Crack the eggs into a separate bowl, beating them before whisking in the milk. Gradually sift in the flour, stirring consistently to avoid any lumps until you have a smooth, pourable batter.
Combine: Pour the egg and milk mixture into the bowl of seasoned vegetables. Mix well until every piece of vegetable is coated in the batter.
Add Cheese: Stir in half of the grated cheddar cheese into the batter, saving the remainder for topping.
Bake: Transfer the mixture into your prepared baking dish, spreading it out evenly. Bake in the preheated oven for 35 minutes.
Cheese Topping: After the initial bake, sprinkle the rest of the cheddar cheese on top of the bake and return it to the oven for another 15 minutes, or until the cheese is perfectly melted and golden.
