Fill a saucepan with water and bring to a boil. Add a pinch of salt.
Stir in the pasta and cook as per package instructions.
Rinse and hull strawberries. Set a few aside for garnish.
In a bowl, combine halved strawberries, honey, sour cream, and optional vanilla.
Mash with a fork (or blend) to desired texture.
Drain cooked pasta. Divide between plates.
Spoon sauce over pasta. Garnish with strawberry slices, mint, and almonds.
Serve warm or chilled.
