Preheat oven to 425°F (220°C). Wash, peel, and slice sweet potatoes into ½-inch rounds or wedges.
In a large bowl, toss sweet potato slices with olive oil, salt, and pepper until evenly coated.
Arrange slices in a single layer on a parchment-lined baking sheet. Roast for 25–30 minutes, flipping halfway through.
During the last 5 minutes of roasting, drizzle honey over the potatoes to glaze.
Transfer hot sweet potatoes to a serving dish. Top with crumbled goat cheese and toasted walnuts.
Garnish with balsamic glaze or thyme if desired. Serve warm and enjoy!
