Creamy Squash And Sausage Orzo
  1. Half the squash (easier said than done), scoop out the seeds, drizzle with oil and season. Roast at 190c fan for 30 mins, cut side down

  2. Remove from the oven and peel. Add to a food processor and blitz with the herbs and garlic

  3. Fry off the sausage chunks; if using and add the puree to the pan. Fry off for a couple of minutes to cook the garlic before adding the stock and bringing to a simmer. Add the cream and cooked pasta and stir until the cream has thickened.

  4. Season and top with cheese before serving. If it's too sweet, add a squeeze of lemon
