Spicy Creamy Miso Ramen (vegan)
  1. Prep the onion, garlic and ginger. Add to a pot and sauté in oil until fragrant.

  2. Add shiitake mushrooms and sauté over medium heat for 2-3 minutes before adding wood ear mushroom.

  3. Sauté for another minute and add chili garlic sauce. Keep sautéing for another minute.

  4. Pour in soy milk and water. Stir and bring to a simmer.

  5. Once it's simmering, turn heat down to medium low and add miso paste and sugar. Stir until miso paste dissolves (see notes).

  6. Cover with a lid and bring to another simmer.

  7. Once it's simmering, turn off heat and if you are adding coconut milk, add it now. If needed, add light soy sauce. Stir and strain for a smooth broth.

  8. Add cooked noodles to a bowl and pour in the broth. Garnish with green onions, a drizzle of chili oil for extra heat and the mushrooms. Add ramen egg if you're not vegan. Enjoy!
