Salted Caramel Oatmeal Cookies
  1. Preheat oven to 350°F. Line baking sheets with parchment paper.

  2. In a large bowl, beat the butter and sugars together until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.

  3. In a separate bowl, whisk together the flour, baking soda, salt and oats. Slowly mix the dry ingredients into the wet ingredients until just combined. Fold in the salted caramel chips.

  4. Scoop rounds of dough, about 2 tablespoons each, onto the prepared baking sheets, spacing them about 2 inches apart.

  5. Bake for 10-12 minutes, until the edges are set but the centers are still slightly soft. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
