Lentil Bolognese
  1. Sauté the onion and garlic in olive oil until softened.

  2. Add the dried oregano, thyme, salt, and pepper.

  3. Stir in the tomato paste and red wine, then add the vegetable broth and lentils.

  4. Simmer until the lentils are tender, about 20-25 minutes.

  5. Crush the walnuts and add them to the sauce.

  6. Add the crushed tomatoes and simmer for 10 more minutes.

  7. Serve the lentil bolognese over the cooked pasta and drizzle with balsamic vinegar.

  8. Top with fresh basil or parsley if desired.
