Toast the walnuts in a small skillet over medium heat. Once cool, chop the toasted walnuts into small pieces.
Lay a piece of prosciutto down flat. Add a small amount of Boursin cheese to the end. Roll it up. Repeat until everything is rolled.
Heat a nonstick griddle pan over medium high heat. Lightly spray it with avocado oil spray. Pan sear the roll-ups for 1-2 minutes on each side. Or until they are lightly golden brown.
Remove them from the pan and add to a serving platter. Drizzle with honey and chopped walnuts. Serve warm and enjoy!
