Cook your rice accordingly
Season your chicken thighs and add to a pan with high sides over medium high heat. Cook for 5 minutes each side. Flip chicken and cook over medium low heat. Once cooked, remove from pan and set aside.
Cut your grape tomatoes into quarters. Add HALF of your grape tomatoes to the same pan with some oil, garlic, oregano and salt. Mix together for about 2 minutes. Then add your chopped spinach. Once spinach is wilted, add your rice and give that a good mix. Then add your lemon juice and the raining grape tomatoes.
Now make your feta cheese mixture by mixing together all of the ingredients in a small bowl.
Mix half of the feta mixture into your lemon rice. Once mixed together, add your diced chicken on top of the skillet. Serve and enjoy!! Top with additional feta mixture.
