Leah's Green Chili
  1. Toss meat in flour.

  2. Dice the onion, tomatoes, and chilis.

  3. Add oil to pot and heat up until it sizzles when you sprinkle flour in it.

  4. Add the meat and cook until there is some color on the pieces. Remove and set aside.

  5. Add the onions to the oil and stir for a bit until they are a little translucent.

  6. Add some of the seasoned flour to create a thick roux.

  7. Add water or chicken stock.

  8. Add the tomatoes and green chilis.

  9. Add salt, pepper, and cumin to taste.

  10. Simmer for a while, stirring regularly, or use a crockpot, or Dutch oven at 250° for an hour or two.
