5 Minute Creamy White Bean & Pepper Soup
  1. Add the canned beans into a sieve and rinse under cold water, then transfer into a food processor

  2. Add 4 jarred roasted red bell peppers over the beans, along with 1 clove of garlic, ½ tsp dried thyme, 2 tbsp extra virgin olive oil, ½ tbsp sherry vinegar and season with sea salt & black pepper, run the food processor on a low speed

  3. After 30 seconds and all the ingredients are well mixed, slowly add in 1 cup vegetable broth while running the food processor on a low speed

  4. Once all the broth has been added, continue to run the food processor for 30 to 60 seconds

  5. Transfer into shallow bowls and sprinkle with a generous portion of finely chopped fresh chives, enjoy!
