Garlic Parmesan Meatloaf
  1. Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

  2. In a large bowl, mix the ground beef, breadcrumbs, Parmesan, eggs, milk, garlic, onion, parsley, Italian seasoning, salt, and black pepper.

  3. Gently shape half of the meat mixture into a loaf.

  4. Place the shredded mozzarella down the center, then cover with the remaining meat mixture and seal the edges.

  5. Brush the top with ketchup and melted butter.

  6. Bake for 45 to 50 minutes.

  7. Sprinkle mozzarella over the top and bake for another 8 to 10 minutes, until melted and the meatloaf is cooked through.

  8. Let rest for 10 minutes before slicing.

  9. Garnish with parsley and serve with mashed potatoes, green beans, or roasted vegetables. Store leftovers covered in the fridge for up to 4 days.
