Marinate chicken with listed ingredients. Shallow fry. Smoke with charcoal + ghee. Set aside.
In the same pan add butter, then cumin, cardamom, bay leaf. Sauté a few minutes. Add onions, dried chillies, ginger garlic, kasuri methi. Sauté until softened. Add water as needed and cook down. Cool and blend into a smooth gravy.
In a new pan heat oil. Add cumin, green chillies, garlic. Sauté a few minutes. Add onions, tomatoes and spices. Cook on medium until reduced and softened.
Add fried chicken. Add blended butter chicken gravy. Add water to loosen. Add cream and simmer for 5 minutes. Garnish with fresh cilantro.
