Thai Style Sardine Salad
  1. In a bowl, combine the fish sauce, sugar, lime zest, juice, and soy sauce. Add salt to taste if needed.

  2. Cut the ends of lemongrass, and thinly slice the stalks. Add into the bowl with shallots, thai chilies, kaffir like leaves, and sardines

  3. Let marinate while you remove the cilantro leaves from stems, chop scallions, and thinly slice cucumbers. Garnish on top of the salad. Let sit while you toast bread or make rice to serve it with
