Hasselback Potatoes With Herb Compound Butter
  1. Preheat oven to 450 degrees Fahrenheit

  2. Mix softened butter with garlic, herbs, salt and pepper

  3. Roll butter mixture into a log in Saran Wrap and refrigerate for at least 30 minutes

  4. Place a potato between two chopsticks or skewers and make thin slices (chopsticks prevent cutting all the way through)

  5. Drizzle potato generously with olive oil, season with salt and pepper, and massage well

  6. Bake for 30 minutes or until the slices begin to separate

  7. Slice compound butter into thin slices and place between the potato slices

  8. Bake for another 30 minutes (may take longer for larger potatoes)

  9. Serve with a slice of compound butter, sour cream, and chives
