Place vegetables of your choice: potatoes, carrots, celery, onions, mushrooms, etc. into a Dutch Oven.
Arrange meat on top of the vegetables.
Combine seasonings, tapioca and liquid. Mix well and pour over meat and vegetables.
Roast, covered, at 325 degrees for 3.5 hours. Do not lift lid during roasting.
May add thawed, baby sweet peas just before serving.
